Food Review: Oat Chocolate Chip Cookies No egg No butter

Feeling depressed and dejected that my job applications are being rejected, and my follow up emails are bring ignored, and my Linkedin messages are not being replied to, I decided to seek some comfort, in some comfort food of course!!!

Come hither, these babies tasted so darn good

I hacked the recipe from here

Of course I made a few adjustments to what I have sitting in my pantry

It tasted good and I was happy

I added chopped up white chocolate while the cookies were cooling down. I just pressed down the chucks into the cookies; which added more craggies to it and made it look even better




Couldn't help myself nibbling into one cookie, damn hoe was beckoning to be eaten (sorry the language)

And here's my version of the recipe


My hacks:

bourbon flavored vanilla essence

granulated sugar instead of brown sugar

sunflower oil instead of coconut oil

2 cups of instant Quaker oats

I usually don't talk about drinks here but this one was worthy of an entry simply because I have never drank anything so damn tantalizing

Goes very well when paired with red meats-it's smooth and smoky at the same time

It is meant to be drunk slowly and in sips over a course of a good night with BFFs

Food Review: Instant Jalebi No Yeast No Besan

I saw this recipe on Youtube from this MasterChef India and she made it look so easy I just had to try it

My sugar syrup was off so I had to stir for way too long just to burn off the excess water so I can get a thick single strand stage, but still, in the end the jalebi turned out really well. Crispy, dripping in sugar and melt in your mouth orange fatsos. Yummy!

Damn just look at these hoes, will you? Do they not tantalize your senses?


They look wiggly because I didn't use a nozzle in my piping bag

I mixed ghee with cooking oil to deep fry the jalebis

Orange coloring in gel instead of powder

Added saffron strands and rose essence in batter

The most overrated recipe in the Indian culinary is the paneer tikka masala. There are so many takes, variations and "authentications" I just decided to pick one recipe off the net and tweak it to meet my needs

I don't care if it is authentic or not. It tasted good. I hate a long rant to go with recipes

Food Review: Blue Ice Cream

My mom had a lot of home made heavy cream sitting in the house fridge so I had my brother bring some over to make ice cream

I whisked the heavy cream with a bit of corn starch and food color until stiff peaks formed. Then I mixed in rainbow sprinkles and icing sugar and put it in the freezer. After 4 hours, you get this!

Food review: Baked red sauce pasta

I have been feeling lazy today to cook elaborate meals so I decided to cook a lazy read sauce pasta and bake it with a generous layer if cheese

Here's my recipe

300 grams pasta
250 grams of baby spinach
1 ball pepper
10 button mushrooms (fresh)
135 grams of tomato paste (box)

Seasonings

2 tablespoons of olive oil for cooking
1 teaspoon of black pepper powder
2 tablespoons of chilli giling
1 medium onion chopped fine
1/2 table spoon of garlic ginger paste
Salt to taste

Topping

Whatever cheese you have lying around in your fridge. I used cheddar, mozzarella and some sandwich cheese

1. Cook pasta all the way with some salt and olive oil

2. While pasta is cooking make the sauce

3. Heat oil in pan. I'm using electic gas so everything cooks super fast at number 9

4. Throw in the onion and garlic ginger paste. Cool until it softens and onions turn light brown

5. Add in the chilli giling paste. Mix well

6. Reduce heat on gas to number 8

7. Add the ball pepper and mushrooms. Cover pan with lid. Cook for 5 minutes. They will soften fast

8. Add the spinach. Mix well. Add the tomato paste. Mix well.

9. Add salt and black pepper

10. Drain pasta and mix in the sauce. Mix well

11. Take a oven proof dish (I used ikea glass lunch box) and dump in the pasta

12. Turn on your oven function to grill or maxi grill to 210 °C. I didn't bother preheating it because all I wanted was to melt and brown the cheese on top

13. Pour the pasta in your oven proof dish and cover the top with a generous amount of cheese, place it in your oven at the top most rack closest to the broiler and bake for 10 minutes

It took me 30 minutes from preparing to cooking to baking

So in my earlier post I had mentioned that I had been hacking other recipe blogs recipes'
While some hack worked some didn't. Over the past week I had been cooking with recipes taken from vegrecipesofindia.com and her recipes are spot on with the measurements. One of her recipe that I really liked was the vegetable burger recipe. Of course the list of ingredient was too long and I only used half of that and whatever I had sitting in the fridge but the burger patties turned out very well that I had to put up the pictures here for you to see

KL Review: Littlewhiz in Setia Alam

Have I been putting off writing on my blog. Motherhood can be so demanding, especially now that my son is learning new things every day. The closer he gets to walking, the more he wants to 'touch base' that is nursing, holding, wearing and what not. I also feel that he has anxiety issues, he keeps waking up at night expecting to be hold and rocked (while walking)

As it is, my patience is slowly running thin, today I snapped at him and he cried. I am trying so hard to be a good mother. Rarely I lose my mind but I think 9 months is taking its toll.

Anyways lets not talk about my parenting style-I am practicing attachment parenting and I wear him in his sling at least 2 hours daily. Plus I am still breastfeeding him. I don't care what shit you have to say about breastfeeding, if you aren't doing it then something is WRONG WITH YOU, NOT YOUR FUCKING BREASTS

Mammals are suppose to NURSE. If your milk is not coming out, then see a doctor, take pills, galactagogues, express frequently, don't give up. And what is this SHIT about CONTROLLED CRYING. The problem with the WEST is that they want their privacy, they want to keep their babies in cribs in separate rooms, and sleep with a monitor by their bed side instead of the baby on the bed. They deny their body's natural maternal instincts from day 1. Then go expecting your kid to turn out the way you wanted to. Having a baby means SACRIFICING, GIVING UP SOME OF THAT SHIT YOU LOVE SO MUCH. I am not going to sugar-coat my words here. I am blessed enough to have birthed an 'easy baby' but I know not all parents are so lucky. YES, BITCHES ITS GOT TO DO WITH LUCK. If you have 'high-need' baby then adjust your lifestyle to meet your baby's need not yours. NO ONE FORCED YOU TO HAVE A CHILD.

SO enough rant and lets get down to business. I was in Malaysia for 3 weeks and found online a company that sold a zillion baby products, even pre-order toys that you want and are not available locally

Its in Setia Alam on the 1st floor of a 3 storey shop lot and the whole place is sandwiched packed from corner to corner , from floor to ceiling with baby products from bedding to imported balms and everything in between

I was impressed with the mass collection of items they had there and I racked up RM 1300 for toys and baby food. It's way cheaper than what I would have to pay over here for the amount of things I bought.

Winging it: salted and roasted cashew nut burfi with white chocolate

I recipe is hacked from KO Rasoi's cashew nut white chocolate burfi


I divided her entire recipe by 4 and because I used roasted and salted cashew nuts I had to add more sugar syrup and after the second time I melted the syrup, it went beyond my 30 minute time frame so I winged it by adding caramel to thicken the dough. Mine was crumbly


Then it hit me that I should have added corn starch to the sugar syrup. There is no better bitch that binds better than corn starch


This is her original recipe and I divided it by 4: 



600g ground cashew nuts, (coarseness depends on your taste)
200ml water
250g sugar
1 tsp coarsely ground cardamom seeds
2 tsp vanilla extract
1 tsp oil
100g white chocolate


Don't follow her recipe with the crap about having the cashew nuts and cardamom seeds to the coarseness you like because unless you are hacking your recipe and adding corn starch the thing won't bind well with sugar syrup


1. Make the sugar syrup according to her recipe. Cook it until it reaches 115°C and then dump into the sugar pan the dry ingredients. Mix well


2. If the shit is still dry and crumbly then bring in the hack


3. Mix 1 teaspoon of corn starch with 1 table spoon of warm water. Pour this into the mixture bit by bit until it becomes a lumpy dough. Turn off the gas


4. Place the cashew nut lump in a pan and flatten it with the back of a spoon. Let it cool at room temperature


5. Bain-marie or microwave the white chocolate and pour it onto the fudge. Flatten it with a pastry spatula or wing it with the back of a butter knife


6. Put the fudge in the fridge let it harden. Cut with a heated sharp knife

Indian bloggers have the time and money to spend hours and hours laboring in the kitchen whipping up fudges, sweet-cakes, pendas and you-name-it-and-they-have-done-it


Take this blogger from Africa-KO Rasoi, who is in bed with sugar and condensed milk and unchartered amount of hours in the kitchen. Me, on the other hand-because of my recent carpal tunnel surgery have limited time in the kitchen which calls me to wing recipes I find online that fits into a 30 minute frame or lesser


Anything that requires mincing is done beforehand and stored in the fridge


Shit that needs grinded is bought ready made ground


Shit that needs roasting is bought roasted and salted


And I have a live-in maid that does the dishes, cleaning up, mixing and cooking


So anyways enough rant. I hate food bloggers that rant pages, I never read their rant and skip right to the recipe at the bottom of the page. Of course I don't want you to skip my shit so I made it short


Now let's wing recipe 1 from this African blogger


She made 3 color paneer burfi


I winged it to 3 COLOR COCONUT-PANEER BURFI


I stuck to her exact measurements except I was feeling lazy to fine shred my fresh-but-store-bought-paneer block so it came out chunky


3 cups fresh paneer, FINELY crumbled or GRATED
1 cup sweetened condensed milk
¼ cup ghee
1 tsp cardamom powder
Pinch of saffron


3 food colours I picked red, yellow and blue
Oil to grease your tin-I used muffin pan


1. Heat ghee and add the paneer and condensed milk


2. Mix the thing well and stir continuously on medium flame for 10 minutes. If it doesn't thicken by then then its time to hack it


3. Add tablespoon by tablespoons Of desicated coconut until you reach a crumbly-yet gooey thickness


4. Turn off the gas and add the cardamom and saffron. Give it a good mix


5. drop a few drops of different food coloring in three separate bowls


6. While the mixture is hot, make 2 equal portion and dump it into 3 bowls. Wear a glove when you are mixing hot dough you don't want to burn your hands. Make sure the color is well incorporated into the paneer


7. Take out your pan and choose whatever color you like as the Base color. I picked blue. Use the back of a spoon to flatten the shit on the pan. Do the same with the other 2 colors


8. Let it sit outside till it cools down then store it on fridge


9. Turn the pan upside down the next day and voila you get 3 color paneer coconut burfi
